RAW BANOFFEE PIE RECIPE

What will you be serving for dessert this festive season? With Thanksgiving celebrations, Christmas parties, and general summertime get togethers (adhering to social distancing rules obvs!) filling our calendars, we spoke to our friend Naturally Nicolette for a healthy and delicious recipe to whip up for family and friends. And behold! Nicolette has shared with us her vegan friendly Raw Banoffee Pie recipe that is sure to impress.

Ingredients

Base

  • 1 cup raw almonds
  • ½ cup pecans
  • 1 cup medjool dates
  • 1 tbsp maple syrup
  • 1 tbsp cinnamon
  • Pinch of salt

Filling

  • 1 cup almond butter
  • 1 tsp vanilla bean paste
  • 1 ½ cup hulled tahini
  • Pinch of salt
  • 2 tbsp maple syrup
  • 2 tbsp warm water
  • Topping
  • 350ml coconut cream
  • Raw dark chocolate shavings
  • 1-2 bananas sliced

 

Method

  1. In a food processor, combine all of the base layer ingredients until a sticky crumble forms and place firmly into your pie tray. Leave in the fridge for 1 hour.
  2. In a food processor, combine all of the filling ingredients until it forms a thick creamy consistency. Smooth it into the base layer and then leave to set in fridge again for 1-2 hours.
  3. For the topping, whip the coconut cream until light and fluffy and spread it on top of your pie once it has set. Top with sliced banana and chocolate shavings.
